Here’s what you need to create this culinary masterpiece:

  • 1 cup dried green or brown lentils, rinsed
  • 4 cups vegetable broth
  • 2 cups mixed mushrooms (such as blue oyster, shiitake, and chestnut), sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 2 celery stalks, diced 1 can (14.5 oz) diced tomatoes, with juice
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Cooking Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.
  2. Add the diced carrot and celery, and cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the sliced mushrooms and cook until they are tender and start to release their juices.
  4. Add the dried lentils, vegetable broth, diced tomatoes (with juice), dried thyme, dried rosemary, bay leaf, and smoked paprika. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30-35 minutes, or until the lentils are tender and the stew has thickened.
  6. Season with salt and pepper to taste.
  7. Remove the bay leaf before serving. Garnish with fresh chopped parsley.
